Sourdough Banana Muffins are a delightful way to use your
sourdough starter and add a tangy twist to traditional banana muffins.
Ingredients:
1 cup ripe bananas, mashed (about 2-3 bananas)
1 cup sourdough starter
1/2 cup unsalted butter, melted
1/2 cup dark brown sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup chopped nuts or chocolate chips (optional)
little bit of cinnamon & sugar sprinkled on top
Instructions:
Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the cups.
In a large mixing bowl, combine the mashed bananas, sourdough starter, melted butter, sugar, eggs, and vanilla extract. Mix until well combined.
In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon if using.
Add the dry ingredients to the wet ingredients and gently fold until just combined. Be careful not to over mix; a few lumps are okay.
If you're adding nuts or chocolate chips, gently fold them into the batter.
Divide the batter evenly among the muffin cups, filling each about 2/3 full.
Bake in the preheated oven for 18-22 minutes or until a toothpick inserted into the center comes out clean.
Allow the muffins to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.
